1 Tablespoon Canola oil
1 Large Onion, Chopped
1 Large Red Bell Pepper, Sliced
1 1/2 Cups Vegetable Broth Or Beef/Chicken Stock
5 Cloves Garlic, Minced
2 Can Black Beans, Rinsed, Drained
1 Can Tomato Sauce
3 Tomatoes, Chopped, Retain Juices
1 Tablespoon Ground Cumin
2 Tablespoons Hot Chili Powder
2 Tablespoons Ground Oregano
1 Cup Fresh Shucked Corn
1/3 Cup Fresh Cilantro, Chopped

Cooking Directions:
Heat up your 1 tablespoon oil in a large skillet. Once hot gently saute the onions, bell peppers for a few minutes until tender. Add minced garlic, ground cumin, hot chili powder and continue to saute for 2 extra minutes. Add remaining ingredients minus the cilantro and corn. Simmer uncovered for 20-22 minutes. Add corn and cook additional 3 minutes. Once complete top with chopped cilantro. Serve hot with crackers or shredded cheese.
