1 Pound Lean Ground Beef, Twice Grounded
2 Teaspoons Canola Or Sunflower Seed Oil
3 Cloves Garlic, Minced
1 Large Onion, Chopped
1/2 Cup Celery, Chopped
1 Red Bell Pepper, Seeded, Sliced
3-4 Tomatoes, Chopped
2 Tablespoons Tomato Paste
3 Jalapenos, Chopped
1 Can Kidney Beans
1 Can Pinto Beans
2 Tablespoon Chili Powder
1 Teaspoon Cayenne Pepper
1 Tablespoon Ground Cumin
1 Teaspoon Ground Oregano

Cooking Directions:
In a large skillet or Dutch oven heat up the oil over medium high heat. Saute the garlic, jalapenos, onions and celery gently for about 3 minutes or until fragrant becomes rich. Now add in the twice ground beef and brown all the way through. Once browned add in the remaining ingredients and bring to a rolling boil. Reduce heat and simmer uncovered for 25 minutes. Serve Hot with saltines or shredded low fat cheese.
