3-4 Pounds Boneless Pork Roast, Cubed
1 Large Onion, Chopped
5 Garlic Cloves, Minced
2 Cups Cold Water
3-5 Tomatoes, Chopped
2 Cans Chopped Green Chilies
2 Large Potatoes, Cubed
1 Fresh Sprig Cilantro, Chopped
2 Tablespoons Chili Powder
1 Teaspoon Ground Cumin
2 Teaspoons Ground Oregano
1 Teaspoon Salt
1 Can Pinto Beans, Drained
Sour Cream [Optional]
Chopped Green Onions [Optional]

Cooking Directions:
Brown the pork cubes with the onions and garlic. Once brown add in the remaining ingredients minus the beans. Bring to a rolling boil, reduce heat to medium low and simmer covered for 45 minutes. After that 45 minutes add the beans and continue to simmer covered an additional 30 minutes. Top with optional ingredients if desired.
