Ingredients:
2 Large Yellow Onions, Chopped
2 Tablespoons Butter Or Margarine
1/3 Cup Tomato Paste
1 Tablespoon Cocoa
1 Teaspoon Ground Cumin
2 Large Carrots, Sliced
2 Celery Ribs, Chopped
4 Jalapeno Peppers, Seeded, Minced
4 Tomatoes, Crushed
2 Cups Cooked Black Beans, Rinsed
1 12 Ounce Dark Beer
1 Cup Mozzarella Cheese
1 Cup Pepper Jack Cheese
1 Cup Sharp Or Extra Sharp Cheddar Cheese

Cooking Directions:
In a large saucepan or skillet saute the onions in the butter until they are tender but still crunchy. Add tomato paste along with the remaining spices. Cook until its a consistent dark brown, about 8 minutes. Now add in the remaining ingredients along with as much beer to reach your desired consistency. Simmer on medium low heat for 2 hours. When done Stir in Mozzarella cheese until well blended. Top with additional cheese and bake for at least 4 minutes in broiler. Serve hot with Chips or a dollop of sour cream.
