Ingredients:
1 Tablespoon Sun Flower Seed Oil
2 Cloves Garlic, Minced
1 Large Onion, Chopped
1 Cup Crumbled Tofu
2 Large Tomatoes, Chopped
3 Cups Vegetarian Baked Beans, Half Drained
1/3 Cup Ketchup
1 Cup Fresh Shucked Corn
2 Teaspoons Paprika
1 Teaspoon Ground Cumin
1 Teaspoon Cayenne Pepper
1/2 Teaspoon Chili Powder
2 Tablespoons Masa [Cornmeal Dough]
Shredded Cheddar Cheese [Optional]
Sour Cream [Optional]
Bread [Optional]

Cooking Directions:
Thinly slice the tofu, lay it out on a paper towel and cover with another paper towel. Let stand for at least 25 minutes. Saute the onions and garlic in a large saucepan over high heat with the tablespoon of sun flower oil. Once golden soft add in the tofu and saute an additional 4-5 minutes. Add in the remaining ingredients, cover and simmer on low-medium heat for about 45 minutes. Stir occasionnally. Top with optional ingredients and enjoy.
