Recipe for glazed spareribs with honey and chili marinade. The sweet and spicy honey glazed ribs can be cooked on the grill or in the oven. Indirectly grilled, the ribs remain particularly juicy and aromatic and get a wonderful smoky flavor.

For the ribs
 3 lbs pork ribs (spareribs)
 ground black pepper
 salt
For the marinade
 2 tbsp honey
 6 tbsp sweet soy sauce
 10 tbsp soy sauce
 ground black pepper
 paprika powder
 chilli powder
 garlic powder
 BBQ Rub
Optional
 freshly pureed chilies
 Sriracha sauce
 Hot sauce
 4 garlic cloves
 1 onion
 bourbon

For the honey marinade, mix 2 tablespoons honey with 6 tablespoons sweet soy sauce and 10 tablespoons soy sauce in a small bowl.

Add the paprika, garlic powder and freshly ground pepper and stir. Instead of garlic powder, we usually use freshly pureed garlic. The marinade also tastes good when it is mashed with a small onion.

Add plenty of hot chili powder. Instead of chili powder you can also use hot sauce or sriracha sauce. However, the marinade tastes even better when cooked with freshly pureed chillies.

Dab the spare ribs dry and season with freshly ground black pepper and salt and rub with a bit of BBQ rub.

Brush the ribs with one-third of the honey-chili marinade on both sides with a kitchen brush. The rest of the marinade will be needed later. Let spare ribs marinate in the refrigerator for at least two hours.

The following preparation steps are different depending on whether the spare ribs are to be grilled or cooked in the oven. However, the ribs taste best grilled indirectly.

Place the ribs on the grill and grill for about 15 minutes from each side half indirectly with a little more heat.

Cook indirectly on the grill for about 1.5 hours at low heat. Again and again brush with honey-chili-marinade, until it is used up. So the spareribs stay nicely juicy and get a wonderful aroma.

Divide into portions of 4 to 5 ribs each and serve hot.

Oven baked ribs

Preheat the oven to 450 degrees Fahrenheit top / bottom heat with grill function.

Place the marinated ribs in a roasting pan or a low casserole dish and place in the preheated oven. Grill for about 10 to 15 minutes at 450 degrees Fahrenheit.

Take the roasting pan out of the oven and sprinkle the spareribs with honey marinade. Lower the oven temperature to 350 degrees Fahrenheit and leave to stew for about 30 to 45 minutes with the lid in the oven.

Now turn over the spare ribs and brush them once more with the marinade and cook in the oven with the lid on for another 30 to 45 minutes.

After the time has elapsed, remove the lid and cook for about 20 to 30 minutes without a lid. Brush regularly with a little marinade. So the meat does not get too dry. It remains particularly juicy when the temperature is lowered to 260 degrees Fahrenheit and the cooking time is extended slightly.
